Beta Carrotene Soup:
I have made this soup a few times, and each batch is a bit different. I got the recipe from Allan, the owner of our old favorite neighborhood restaurant, La Barra. I was shocked he revealed his recipe, as it is now one of my faves!
- bag of baby carrots
- 1 white onion, sauteed
- 3-4 cloves garlic
- 1 habanero pepper
- sea salt & black pepper
- tablespoon ginger
- pinch of curry powder
- 1 vegetable bouillon cube
- 2-3 cups water (enough to fill water to the top of the carrots)
This serves four, or holds well as leftovers for a few days. Delicious & hearty!
