Baked Asparagus:
asparagus, chopped
olive oil
salt & pepper
chickpeas
parmesan cheese
Coat with oil, bake to al dente, & top with cheese. I put this meal over quinoa to make it a little more filling. It is well-balanced with vegetable, protein & healthy fats.
