MyDailyBread:
In the mood for a serious breakfast… so we have a nutella sammie on wheat bread that I put into an eggy bath and hit the skillet. Fresh berries on top and a sprig of mint. Dang!

Balsamic-Veggie Quinoa:
This dish is perfect for those busy work weeks when I’m temped to order in. Firs boil the beets until tender, while sauteing the asparagus and simmering the quinoa. Everything comes together around the same time, then transfer it all into one large pan with a balsamic reduction. Toss in some pistachios & voila! Super-easy dinner full of flavor.

Its been awhile since our last Brooklyn Supper Club get together. Pictured above is a lovely meal prepared by Megan, Chelsea & Joanna in Park Slope. It was delicious!

Sweet Blueberry Granola:
I’m sure you’ve noticed by now that I’m a big fan of making my own granola. I try to do it a little differently each time. This batch turned out pretty yummy.
This granola was amazing sprinkled over top a whole-wheat English muffin with Blueberry preserves, in blueberry-flavored coconut yogurt, or just plain by itself. Any other granola ideas you’d like to pass my way?

Stuffed Poblano Pepper
My friend Kathryn and I absolutely love this tiny ceviche bar in the Lower East Side called La Bara. The owner is such an interesting, friendly guy who always welcomes us with smiles, stories, wine on the house and even Babycakes cupcakes from right next door (my FAVE). Last weekend Kat and I went in and spent about three hours chatting it up with our new friends at La Bara and sampling a good majority of the menu. They have lots of different ceviches, tacos, tostadas, empanadas, and more! The owner, Alan goes shopping himself every single morning and picks out the freshest ingredients he can find.
This was one of my favorites: poblano pepper stuffed with cotija cheese, tuna, capers & onions, marinated in a white wine sauce. It was heavenly. I’ll be back soon.

My Favorite Polenta Brunch:
I buy polenta at the store that is already cooked and all you have to do is just slice it and warm it up. Its so delicious in many different dishes, but this polenta breakfast edition has been a personal favorite lately. I love big hearty breakfasts full of flavor, especially on the weekends!

A lot of times I crave crunchy textures. What better way to get your crunch on than by making some granola? Its delicious on its own, in yogurt or submerged in almond milk. Nom nom.
My Home-made Granola:
Stir it all together and spread it on a pan. Toast it in the oven at 350 until it smells like heaven. You’ll have yourself a sweet snack that satisfies the sweet tooth (which we all know I have) in no time!
