

On the weekends, I really enjoy taking my time to cook a fancy breakfast. I often order poached eggs at restaurants, and my roommate recently taught me how to cook them myself at home. Her and I collaborated our ideas and groceries one morning and came up with this delightful breakfast platter:
- 2 poached eggs with sea salt & black pepper
- Sauteed mushrooms with olive oil, onions, & a drop of truffle oil
- Spelt english muffins, toasted
- Mixed greens with fresh lemon and olive oil
Rise, shine & cook!


This is a great way to satisfy a sushi craving and make it your own.
Sushi Bowl:
- Brown rice
- Broccoli
- Edemame
- Nori strips
- Sesame seeds
- Tofu (not pictured)
- Cucumber & carrot (not pictured)
- Avocado
- Wasabi sauce
- Soy sauce
Top it off with some green tea ice cream, de-lish!

Ah, brunch. My favorite meal of the day.
- Frittata with smoked salmon, goat cheese, and green onions
- Grilled toast with butter
- Greens with balsamic vinaigrette


The president of my company had a birthday last week, and his assistant Emily was kind enough to bake two beautiful pies for the office to enjoy. The top pie is strawberry/mango which was the fan favorite, served with mango sorbet. The bottom pie is her blueberry specialty, usually paired with coconut sorbet or vanilla ice cream.
If this doesn’t trigger a sweet tooth, I don’t know what would!



My friend Megan made a beautiful salad and I had to share it with you:
- Spinach
- Beets
- Orange
- Avocado
- Goat cheese
- Hazelnuts
- Dressing: coconut oil mixed with the juice of the orange


I always crave Mexican food! Depending on where I get it, it’s not always the healthiest option. I had some random ingredients so I decided to try my own version of a Mexican-ish salad:
- Spinach
- Black beans
- Avocado
- Red and yellow tomatoes
- Corn
- Salsa
- Cilantro
- Blue corn tortilla chips
Comida deliciosa!

I walked into the grocery store the other day and was hit in the face with the sweet aroma of fresh peaches, so I had to buy one. Paired with vanilla soy yogurt, it made for the perfect mid-morning snack!

I was feeling the need for a nutritious breakfast this morning after a long night of partying. A little bird told me that eggs are the best thing for that. I didn’t have any bread, but I had some veggies so I threw them in a pan and came up with this little bit of goodness:
- 1 egg
- Orange bell pepper
- Portobello mushrooms
- Fresh spinach
- 1 tablespoon extra virgin olive oil
- Salt & pepper
- Fresh brewed Stump Town coffee in the french press
Now I can function today!

Last night, my friends and I put on some salsa music, drank some red wine and cooked up a Latin feast. Once that music comes on, we just can’t stop movin’ - dancing around the kitchen while cooking is the best way to do it!
The spread:
- Avocado/green pepper soup
- Arroz verde w/ cilantro and garlic
- Salsa w/ black beans, corn, avocado, tomatoes, red onion and cilantro
- Wheat tortilla chips
- Sweet plantains
It was a lot of food - enough for seconds. We love our theme nights!
